Pesto tagliatelle, peppers and squash recipe
Pesto tagliatelle, peppers and squash recipeRoasted peppers, butternut squash, onion and courgette taste great stirred through tagliatelle with a little reduced-fat pesto sauce. Prep: 10 mins Cook: 30 mins Serves 4 Ingredients350g butternut squash, peeled and cut into chunks 1 red pepper, deseeded and cut into chunks 1 yellow pepper, deseeded and cut into chunks 1 medium red onion, peeled and sliced 1 teaspoon olive oil 250g dried tagliatelle (or any long pasta, like spaghetti or linguine) 1 medium courgette 4 tablespoons reduced-fat green pesto sauce 4 teaspoons reduced-fat hard cheese, grated 1 pinch ground black pepper MethodPreheat the oven to 200C (fan 180C, gas mark 6). Put the butternut squash, peppers and onion into a large roasting tin. Information: You can buy pre-prepared butternut squash, or peel and deseed a whole medium-sized one. Add the olive oil to the pan and toss to coat the veg. Roast for 30 to 35 minutes, turning once, until tender. Around 10 minutes before the vegetables are ready, cook the tagliatelle in a large saucepan of boiling water for 8 to 10 minutes. While the pasta is cooking, use a potato peeler to slice the courgette into long, thin strips. Add these to the tagliatelle to cook for about 3 minutes. Drain the pasta and courgette, and return to the saucepan. Stir in the pesto sauce and roasted vegetables, along with any juices from the pan. Season with black pepper and serve, sprinkling 1 teaspoon of grated cheese over each portion. View full article

Cheesy ham and leek bake recipeLow-cost and hearty, this quick and easy ham, leek and cheese bake is the perfect mid-week meal. Prep: 15 mins Cook: 35 mins Serves 4 Ingredients6 leek, washed and trimmed 180g wafer-thin ham slices 35g plain flour 20g lower-fat spread 300ml semi-skimmed milk 75g reduced-fat mature cheddar, grated 1 teaspoon wholegrain mustard 1 pinch ground black pepper MethodCook the leeks in a large saucepan of simmering water for 10 to 12 minutes, until just tender, then drain well in a colander. It helps if you leave them for a few minutes to cool slightly too. Wrap a slice of ham around each leek, then arrange them in a large shallow baking dish. Turn on the oven to preheat to 200C (fan 180, gas mark 6). Put the flour, low-fat spread and milk into a non-stick saucepan. Heat, stirring all the time with a small whisk until the sauce is thick and smooth. Cook gently for a few seconds more, then remove from the heat. Information: It's a good idea to invest in a small silicone-coated whisk to help make easy all-in-one sauces. They won't scratch non-stick pans and they help to give a smooth, lump-free sauce. Add all but 1 tablespoon of the cheese to the pan, then stir in the mustard, season with some pepper and keep stirring until the cheese has all melted. Pour the whole mixture over the leeks, then sprinkle the remaining cheese over the top. Information: Try adding some sliced tomatoes on top of the leeks before sprinkling the cheese. Not only are baked tomatoes delicious, but it also adds to your 5 A Day! Bake in the oven for 15 to 20 minutes, until the leeks are heated through and the top is golden brown. Leave to cool for a few minutes, then plate up. Serve 2 leeks for adults and 1 for children. Enjoy! View full article

Bajan cou cou with spicy fish A low-fat adaptation of the delicious national dish of Barbados – cornmeal and okra, served with marinated fish in a tasty spicy sauce. Prep: 35 mins Cook: 30 mins Serves 4 IngredientsMarinade60g fresh coriander 35g fresh parsley 2 stalks celery, roughly chopped 3 spring onions, chopped 5 garlic cloves half a small onion 2.5cm (1 inch) chunk of fresh ginger, peeled 4 sprigs thyme 4 red mild chillis 2 teaspoons lime juice 650g white fish fillets (such as coley, cod or pollock), cleaned and washed Fish sauce1 tablespoon vegetable oil 1 small onion, sliced half a yellow pepper, deseeded and cut into strips half a red pepper, deseeded and cut into strips 2 sprigs fresh thyme 400g tin chopped tomatoes 1 small scotch bonnet pepper, finely chopped (optional) 0.5 teaspoon salt (optional) Cou cou200g cornmeal powder 100g raw okra, diced 1 teaspoon vegetable oil 600ml water MethodAdd the parsley, celery, spring onion, onion, ginger, 4 sprigs of fresh thyme, red chilli and lime juice to a food processor and pulse several times to give a coarse green marinade. Put the fish fillets in a bowl, then pour in the mixture. Turn and brush the fish well to make sure it's completely covered by the marinade. Cover the bowl and put it in the fridge for at least 30 minutes (or even overnight). To make the sauce, heat the oil in a large pan and add the onions and peppers. Cook for about 5 minutes on medium heat until they have started to soften and turn golden. Then add the remaining 2 sprigs of thyme and the scotch bonnet (if using), and cook for 1 more minute. Add the marinated fish, tomatoes and salt, gently stir and spoon the sauce over the fish. Turn the heat down to low, cover the pot and simmer for 10 to 15 minutes. Information: Next time, mix things up by swapping the fish for skinless chicken or lean goat meat. While the fish is cooking, make the cou cou. Add the cornmeal to a mixing bowl and slowly add just enough cold water to cover it. Use a wooden spoon to mix to a smooth paste, with no dry lumps visible. Set this cornmeal paste aside. Put the diced okra in a pot with about 400ml of water. Bring to a medium boil, then lower the heat and leave to simmer for about 5 minutes until the okra softens. Use a sieve or colander to drain the okra, making sure to keep the hot okra water. Put the okra aside, then pour about a quarter of the hot okra water back into the pan and the rest into a jug. With the heat on low, gradually add a quarter of the soaked cornmeal mixture to the okra water in the pot, and whisk to a smooth paste. Add the oil to the mixture and whisk well, before gradually adding the rest of the okra water and cornmeal. Whisk continuously until all the cornmeal and liquid is well mixed and smooth. Switch to a wooden spoon and keep mixing the cornmeal for another 2 or 3 minutes. It will start to bubble and thicken, so will need mixing harder to avoid lumps. At this point add the cooked okra and mix for another few minutes, or until the okra is well incorporated though the cornmeal, and then remove from the heat. Information: For softer cou cou, add more boiled water at this stage. You can also try adding more vegetables for a different texture – diced red and yellow peppers work well. Scatter the chopped parsley over the fish, and serve with the cou cou. View full article

This variant uses a combo of sweet and white potatoes in a rich, spicy sauce to make a quick, easy and low-cost dinner. Prep: 20 mins Cook: 30 mins Serves 4 Ingredients1 scotch bonnet pepper 1 medium chopped onion 2 red bell peppers, deseeded and chopped 300ml water 425g sweet potato, peeled and cut into cubes 425g white potato, peeled and cut into cubes 2 teaspoons red palm oil 1 tablespoon ground crayfish (optional) 1 small (5g) lower-salt stock cube 80g kale, washed 4 hard-boiled eggs, peeled MethodAdd the scotch bonnet, onion and red pepper to a food blender with 300ml water, and blend to a smooth paste. Information: For a richer, saucier consistency, add tinned tomatoes to the blended pepper mix. Pour the blended ingredients into a large pot, then add the white potato, sweet potato, palm oil, stock cube and crayfish (if using). Top up with more water until the potatoes are covered by about 3cm. Information: Yams and sweet potato can be used in place of white potatoes. Cover the pot and boil on a medium-low heat for about 20 minutes, or until the potatoes are soft enough to mash. The mixture should be quite loose and saucy. Lower the heat and use a wooden spoon to gently crush the potatoes and combine with the sauce. Information: The potatoes do not have to be totally smooth – the chunks add extra texture! Stir in the kale and allow the mixture to simmer for 3 to 5 minutes. Information: Spinach makes a good substitute for kale. Frozen leaves work well too. Gently create 4 wells in the mixture and add the hard-boiled eggs. Serve hot and enjoy! View full article

Neighbours fans can expect big trouble for Andrew Rodwell and Holly Hoyland next week, as Rhett Norman rumbles their secret romantic connection. The two characters take one step closer to an affair in this week's episodes, as they share a forbidden kiss close to the Lassiters drinks van. Home and Away's biggest exit plot in years will see Irene Roberts face an angry backlash from her friends. Viewers will know that the soap is gearing up to say goodbye to Irene, who recently disclosed her Alzheimer's diagnosis with the residents of Summer Bay. In upcoming scenes, Irene will announce her departure from the fictional coastal town after 33 years, leaving some members of the community feeling annoyed at her choice. "She wants to use her situation, the money she has and the time she has left, to live the rest of her life the best she can," actor Lynne McGranger told TV Week. After signing her shares of the Diner over to Leah Patterson-Baker, Irene prepares to leave her old life, but Leah, Alf Stewart and John Palmer ambush her, saying they fear for her safety. Channel 5 Speaking about the situation, Leah star Ada Nicodemou said: "This is her diagnosis and this is how she can make the most of a sad situation. It's a positive outlook, considering." The next day, John turns up to find Irene showing her house to a real estate agent and explodes at Irene, telling her she is ignoring the world and her problems. Irene remains resolute in her decision, saying she has clarity now and if she waits, it could be too late. After reflecting on the memories she has made in her home, Irene wonders who will make memories there in the future. "Now she's accepted her diagnosis, memories and flashbacks are flooding back," McGranger said of the poignant moment. The next day, Leah greets Irene, telling her that she will help her to plan her trip with the help of John and Alf, and all she needs to do is pick the locations. In the heartfelt moment, the two realise they will not be in each other's lives for much longer and with laughter and tears, the friends plan Irene's trip together before she leaves Summer Bay for good. Hollyoaks confirms major village return as two arrests change everything
Rex Gallagher boldly returns to the village in Hollyoaks next week – and faces a furious backlash for his role in the exploitation scheme. In a surprise turn of events, Rex is granted his freedom after recently changing his police statement to implicate the true masterminds. Viewers have just seen Rex give evidence confirming that his sisters Grace Black and Clare Devine were both heavily involved in what happened to Dillon Ray, Frankie Osborne and other young people in the local area. This led to Grace and Clare finally being arrested for their crimes, as police detectives Donny Clark and Dodger Savage closed in. In new scenes next week, Tom Cunningham gives Rex his long-awaited introduction to prison top dog Froggy – played by former Emmerdale star John Middleton. However, he's shocked to realise that Froggy has been keeping one crucial detail under wraps… "Tom can't believe it when he finds out that Froggy is Rex's grandfather," our Hollyoaks source explains. "Froggy has been taking a very close interest in Rex, Clare and Grace – and now it becomes clear that it's been personal for him all along. Later, Donny visits Rex to explain that he's being released after helping the police deal with Grace and Clare. As Rex takes his first steps of freedom, he decides to keep to himself. He's mainly worried about how Grace and Clare, who've been released on bail, will react to seeing him back. Rex turns to his on-off boyfriend Ste Hay, hoping that they can get back together. Ste is wary of giving Rex a second chance – at least until he's figured out how his troubled son Lucas would feel about it. "Lucas is still livid over Rex's involvement in what happened to Dillon," our insider adds. "Lucas's volatile temper has already led to several violent incidents at home, so Ste knows he has to tread carefully." Bradley Johnson reveals Vinny's "emotional" sexuality story takes a dark turn in Emmerdale
Bradley Johnson has spoken about his Emmerdale character Vinny Dingle's sexuality story for the first time, revealing how things take a terrifying turn next week. In June, much to his own shock and ours, Vinny tried to kiss new friend Kammy Hadiq (Shebz Miah), despite being engaged to marry Gabby Thomas (Rosie Bentham). While Vinny tried to bury his worries, brushing off questions from Kammy, he soon seeks answers online about his new feelings. But when Vinny meets a man called Mike, who is seemingly supportive as Vinny tries to figure out his sexuality, all is not as it seems, and Mike blackmails Vinny. Chatting to RadioTimes.com and other press, Johnson told us how it all unfolds. "All of a sudden we see this sort of shift in [Mike's] body language and his attitude. He starts saying some really horrible, hurtful stuff to Vinny, and Vinny's like, 'Whoa, what's going on here?' Vinny is in danger from 'Mike'. ITV "He beats Vinny up. It's a horrendous beating and Vinny's on the floor and he's having flashbacks to everything that happened with him and Paul [Vinny's abusive late father]," explained the actor. "Mike demands that he send him £10K or else he'll expose his secret to Gabby. And what I think is so cruel that Mike's done, he's secretly recorded Vinny on every meeting. "When Vinny's on the floor, scared, vulnerable, he plays this recording back to him, and we just see Vinny's world completely collapse." We'll have to wait and see if anyone can come to Vinny's rescue. In the meantime, Johnson has shared his initial reaction to his alter ego's new path. "When I first got told it was a complete shock to me, as I had no idea that was the avenue they were gonna go down with Vinny. "But once Sophie and Laura told me the storyline, it was quite exciting!" he added. "For Vinny, [and] everything he's been through in the past with Liv, I think it's a really exciting story to tell of a young lad who's confused, really." Johnson says Vinny's love for late wife Liv remains. ITV Vinny's wife Liv (Isobel Steele) died in 2022, and the actor explained how Vinny's new journey won't diminish his true love for her. "I say a line in the upcoming storyline where it's like, 'I loved Liv, I properly loved Liv,' and I believe it's the first person that Vinny's ever fallen in love with. "And because obviously Liv had the asexual storyline, I think it just makes him confused of, like, did he love Liv because she was a woman, or did he love Liv because of [her] personality?" Teasing what viewers can expect going forward, Johnson concluded: "I think it's gonna be shocking, emotional, exciting for the audience to watch; so I'm really, really excited." View full article

EastEnders' Michelle Ryan reveals her dream cast member return for reunion with Zoe
Michelle Ryan has shared who she would most like to reunite with in EastEnders, ahead of her permanent return as Zoe Slater after 20 years away. In an exclusive chat and photoshoot with Radio Times magazine, Ryan was joined by co-star Jessie Wallace, who plays Zoe's estranged mum Kat Moon. Asked what her next dream return would be for the soap, the actress replied: "I would like Kim [Medcalf] to come back, who played Sam." Wallace added: "Oh yeah, she came back. Yeah, she's brilliant." "Yeah," Ryan agreed, standing by her answer: "So, Kim." Kim Medcalf as Sam Mitchell. Zoe initially believed that she had delivered the killer blow, but Sam witnessed Den's scorned wife Chrissie (Tracy-Ann Oberman, who made her own brief return last year) finishing him off and eventually filled Zoe in. With Zoe starting a new life abroad soon after, she and Sam haven't seen each other since 2005, but could their past ever be revisited? Whatever happens, and with Kat and Zoe yet to come face-to-face on-screen, we can't wait to see how this infamous mother and daughter reconnect. Meanwhile, on which other Slater she would have chosen to play, Wallace laughed that she'd pick Kat's wild grandmother Mo Harris (played by Laila Morse). Teasing the future of the Slaters now they're in charge of The Queen Vic, Wallace promised: "It's gonna be mayhem." Coronation Street confirms new owners of the Rovers
A familiar face brings two newcomers along for the ride. Coronation Street has announced the return of a familiar face as the new landlady for the Rovers Return - alongside two brand new castings. Catherine Tyldesley is back filming as her bubbly alter ego Eva Price for the first time since 2018, but Eva won't be alone. Aaron McCusker and Pauline McLynn, acclaimed actors who starred in Shameless as Jamie McGuire and Libby Croker respectively, are joining the ITV soap as Eva's new partner and his interfering mother! McCusker will play Ben Driscoll, and McLynn will star as Maggie, with Eva and Ben set to be unveiled as the next owners of the Rovers this October. Viewers will recall that Eva previously worked at the iconic pub as a barmaid, and endured an on-off romance with Aidan Connor (Shayne Ward), during which time she fell pregnant. Eva agreed to give the baby to Toyah Battersby (Georgia Taylor), the step-sister of Eva's half-sister Leanne (Jane Danson), but after Aidan tragically took his own life, Eva eventually took baby Suzie back and left to start afresh. Now Eva is poised for a catch-up with Leanne and Toyah, as well as her old friends on the cobbles - but the question is, what has she been up to in her time away? And just how will Eva, Ben and Maggie, as well as little Suzie and Ben's two sons, settle into the community? EastEnders fans may also recognise McLynn as Yvonne Cotton, wife of villainous Nick (John Altman), while McCusker starred as Jim Hutton, Freddie Mercury's boyfriend, in Bohemian Rhapsody. The soap has promised that the Price-Driscolls will arrive with 'a suitcase full of secrets', and Coronation Street producer Kate Brooks shared: "We are beyond thrilled that Eva is returning as the landlady of the Rovers, with her new blended family in tow.
