Packed with garlic, sun-dried tomatoes, and fresh spinach, it’s comfort food elevated to a restaurant quality meal. The best part? It’s simple enough to make on a weeknight, but impressive enough for dinner guests.

Ingredients (Serves 4)
  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • ½ cup sun-dried tomatoes, chopped

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 2 cups fresh baby spinach

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

Instructions
  1. Prep the chicken: Pat the chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.

  2. Cook the chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook 5–6 minutes per side until golden brown and fully cooked. Remove and set aside.

  3. Make the sauce: Reduce heat to medium. Melt butter in the same skillet. Add minced garlic and sauté for 1 minute until fragrant.

  4. Add tomatoes: Stir in cherry tomatoes and sun-dried tomatoes. Cook 2–3 minutes until slightly softened.

  5. Add cream and cheese: Pour in heavy cream and sprinkle in Parmesan cheese. Stir until smooth and creamy.

  6. Add spinach: Toss in fresh spinach and cook until wilted.

  7. Combine and serve: Return the chicken to the skillet, spoon sauce over the top, and simmer 2–3 minutes. Garnish with chopped parsley and serve warm.

Tips
  • Serve with pasta, mashed potatoes, or rice to soak up the creamy sauce.

  • For extra flavor, try adding a splash of white wine to the sauce before adding the cream.

  • Leftovers store well in the fridge for up to 3 days and can be reheated gently on the stove.
