Ingredients (Serves 4)
4 boneless, skinless chicken breasts
2 tbsp olive oil
3 tbsp butter
4 cloves garlic, minced
1 cup cherry tomatoes, halved
½ cup sun-dried tomatoes, chopped
1 cup heavy cream
½ cup grated Parmesan cheese
2 cups fresh baby spinach
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Prep the chicken: Pat the chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
Cook the chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook 5–6 minutes per side until golden brown and fully cooked. Remove and set aside.
Make the sauce: Reduce heat to medium. Melt butter in the same skillet. Add minced garlic and sauté for 1 minute until fragrant.
Add tomatoes: Stir in cherry tomatoes and sun-dried tomatoes. Cook 2–3 minutes until slightly softened.
Add cream and cheese: Pour in heavy cream and sprinkle in Parmesan cheese. Stir until smooth and creamy.
Add spinach: Toss in fresh spinach and cook until wilted.
Combine and serve: Return the chicken to the skillet, spoon sauce over the top, and simmer 2–3 minutes. Garnish with chopped parsley and serve warm.
Tips
Serve with pasta, mashed potatoes, or rice to soak up the creamy sauce.
For extra flavor, try adding a splash of white wine to the sauce before adding the cream.
Leftovers store well in the fridge for up to 3 days and can be reheated gently on the stove.
