Spaghetti Carbonara is a beloved Italian classic that’s rich, creamy, and packed with flavor. With just a few simple ingredients eggs, Parmesan, pancetta, and black pepper you can make this delicious comfort food at home in under 30 minutes.

Ingredients (Serves 4)
  • 400g spaghetti

  • 150g pancetta, diced

  • 3 large eggs

  • 100g Parmesan, grated

  • 2 cloves garlic, minced

  • Salt and black pepper, to taste

  • 1 tbsp olive oil

Instructions
  1. Cook spaghetti in salted boiling water until al dente. Reserve ½ cup pasta water.

  2. In a pan, heat olive oil and sauté pancetta and garlic until crispy.

  3. Beat eggs with Parmesan and a pinch of black pepper in a bowl.

  4. Drain pasta and return to the pot. Quickly mix in egg mixture, tossing constantly. Add reserved pasta water if needed for creaminess.

  5. Add pancetta, mix, and serve immediately with extra Parmesan.

Tips
  • Work quickly when adding the egg mixture to avoid scrambling.

  • Garnish with fresh parsley for a pop of color.
